I love perfect pairings. Two things that are so good together that they literally make each other better. A winning combination. There are countless ones when it comes to food. Luckily, the best-known are truly tried, tested and certain to please. They obviously have to be. If the majority of people didn’t perceive something as good, then it wouldn’t be making an appearance on the list of the greatest hits. I believe that coconut and lime rightfully deserve their spot on that list. While I am pretty fond of lime on its own, I generally feel indifferent towards coconut. But put together in this coconut lime ice cream, they simply shine.

This recipe has only a handful of basic ingredients and it doesn’t contain egg yolks. It does involve alcohol though. But the amount is so minimal that it’s not reason enough to call it boozy or even tipsy. The alcohol is added for a creamier texture and easier serving. Since alcohol doesn’t freeze, your ice cream will not be frozen solid and need to thaw up a little before you can scoop it (or eat it straight out of its container like we’ve all done once or twice before). You could probably skip the alcohol if you absolutely must, but I strongly encourage you to include it. After all, apparently even fruit juice, kefir and kombucha can have some alcohol in them.

  • 400ml (1 can) coconut milk
  • 200ml (just over 3/4c) whipping cream 35%
  • 120g (1/2c) sugar
  • zest and juice of 2 limes (about 60ml)
  • 2tbsp white rum

Directions:

  1. Combine 400ml coconut milk and 200ml whipping cream and chill really well. Possibly even in the freezer.coconut milk and cream
  2. Roughly zest 2 limes.limes and zest
  3. Then juice the zested limes directly into a small pot with 120g sugar.sugar and lime juice
  4. Set the pot with sugar and lime juice on gentle heat and stir occasionally until all the sugar is dissolved. Then chill the syrup.lime syrup
  5. Add the lime zest to 2tbsp white rum and let infuse in the refrigerator or freezer.lime zest and rum
  6. When all the components are thoroughly chilled, mix them first together and then churn in an ice cream maker.combined milk, cream, syrup and rum
