The quickest s’more cupcake
Much as I love baking, there are times when craving hits so suddenly that even 15 minutes would be too long. Say, you’ve just had a satisfying meal but need a dessert and nothing has been prearranged. Or, perhaps, you are about to have a cup of your preferred hot beverage and demand a worthy accompaniment. Luckily, this s’more cupcake comes to the rescue in all those situations and likely many others. And did I mention that it takes less than 2 minutes to prepare it? Yes, there is a literal s’more cupcake and it comes together quicker than it normally takes to clear the table after dinner. To “worsen” the matter further, the only utensils you will need besides the cup is two spoons. In other words, this is probably the least messy dessert you will ever make.
And if you are still unconvinced, this is about as guilt-free as it gets. Normally I make this using whey but milk works too. Canola oil is neutral enough but use whichever fat you prefer, even melted butter. I have tried using plain flour and the result is too dense so I recommend sticking to oat flour. Since this is “baked” in a microwave oven and they differ in power, you might have to adjust cooking time to your liking by a few seconds.
S’more cupcake ingredients:
- 3tbsp whey (milk)
- 1tbsp (canola) oil
- 1tsp sugar
- 1/2tsp baking powder
- pinch of salt
- 1/4c oat flour
- 2 chocolate squares
- mini marshmallows
- splash of cream
Directions:
- Pour 3tbsp whey (milk) into your cup.
- Add 1tbsp oil.
- Sprinkle 1tsp sugar.
- Add 1/2tsp baking powder and a pinch of salt.
- Stir well until everything is combined before adding 1/4c oat flour.
- Mix well and stand 2 chocolate squares in the middle.
- Microwave on full for 40 seconds.
- Top with mini marshmallows and microwave 20 more seconds.
- Add a generous splash of cream and devour immediately.
